Gusto Historico Tobaxiche Amarillo (Agave karwinskii sp) is made by maestro mezcalero Juan Garcia in Miahuatlan, Oaxaca. The agaves are cooked in an underground pit over, ground by tahona, fermented with open air yeasts, and single distilled in a copper refrescadera still.
