Santaleza’s process begins with the agave and the jimadores. The 100% Blue Agaves are harvested by hand by skilled jimadores who live for the art of detecting, selecting and cutting only the best agaves

THE AGAVE Our agaves are harvested in los altos de Jalisco once they reach full maturity.
FERMENTATION The smashed agave fibers are deposited in our wooden vats, and left to ferment in a totally natural fermentation process. This process can take up to a week.
COOKING The mature agave hearts are placed into our masonry oven. They will spend 48 hours and rest for and additional 24 hours for optimal conditions.
DISTILLATION Once we have the fermented agave juice, we distill the juice twice in copper stills.
