Cooked in a conical earthen oven
Milled by hand using wooden mallet & canoa, and with small mechanical grinder
Fermented with ambient yeast and spring water in stainless steel tanks
Distilled twice using traditional copper pot still
Mineral & salt, delicate flowers, kiwi, dragon fruit, white chocolate, anise, citrus peel
46.6% ABV (subject to change from batch to batch)
A smaller subspecies of Agave angustifolia common to the state of Puebla, this example from the Salas family is particularly beguiling. Floral and fruity, full of anise and cacao, yet grounded by earthy notes of clay and soft minerality. Sure to redefine your understanding of the species.
